Southern Baked White Fish With Artichoke Relish

Ingredients Spread 1/2 of the olive oil in pan.  Season fish on both sides with old bay and Creole seasoning.  Spread the remainder of the oil on top the fish.  Bake in oven for 20 minutes at 350 degrees.  Sprinkle parsley over the fish after baking.  Serve with Artichoke Relish.

Jerusalem Artichokes are the the root of the Sunflower: this root with other spices become a very tasty hor d'vour or side dish!
