Low Carb Dream Food-Zucchini Pizza

(From Our September 2013 Newsletter)

Ingredients
  • 3 medium to large zucchini's

  • Sea salt (to taste)

  • Pepper (to taste)

  • Garlic powder (to taste)

  • Olive Oil

  • 1 small jar pizza sauce

  • Shredded cheese (I personally like the Italian 4 cheese type)
The rest of the toppings are as per your personal choice.  Everyone likes a different topping on their pizza.
You can use veggies, meats, olives… whatever your taste buds desire!
Slice each Zucchini in half lengthwise.  Lightly carve out the center seed portion with the tip of a spoon.
There isn't much to remove, but I do this because it allows room for a few extra toppings.
*Tip:  I like to take a thin slice off the bottom of the Zucchini so it will sit squarely on the baking sheet.
Dab the top of the Zucchini with a paper towel to dry the surface a little bit.
Brush with olive oil and sprinkle garlic powder, salt and pepper on the Zucchini.
Top with Pizza Sauce, any of your favorite toppings, and cheese.
Place on a baking sheet lined with foil.
Bake in a 375 degree oven for approx. 20-30 minutes.
Ovens vary, so watch, and don't overbake the Zucchini!
Test with a fork after 20 minutes.
You want it soft but not mushy.
Recipe serves 2-3 people.
