Cheesy Pasta and Kielbasa Casserole

(From Our April 2014 Newsletter - Grandma C.)

Ingredients
  • 1 medium onion, chopped

  • 1/2 cup sliced celery

  • 1 pkg kielbasa, either beef or turkey, sliced

  • 1/2 cups penne, rigatoni or rotini pasta, your choice

  • 1/2 cup grated parmesan cheese

  • 1/4 cup grated mozzarella cheese

  • 1 cup milk

  • 2 tbsp butter or margarine

  • 1/2 can fire roasted stewed tomatoes, drained

  • Garlic salt, salt and pepper

  • Seasoned bread crumbs
Boil the pasta according to package directions.  Set aside.
Slice the kielbasa in 1/4 inch rounds.  Saute kielbasa with onion and celery until browned, drain away any grease.
Put milk, butter and cheeses together in a bowl and microwave until very warm and cheese is slightly melted.  (Microwave temperatures vary, so you'll have to keep an eye on it).
Add sauteed kielbasa mixture to pasta, toss.  Add salt, pepper and garlic salt to taste.
Add cheesy milk mixture and mix until everything is coated.  Then add the stewed tomatoes, just folding them in gently.
Top with seasoned bread crumbs and bake in 350 degree oven for 30 minutes or until top is slightly browned.
Serve with garlic toast and enjoy!
