Crockpot Chicken-Hawaiian Style

Ingredients
  • 2 lbs boneless chicken breast, cubed

  • 1 cup pineapple juice

  • 1 can (20 oz) chunk pineapple

  • ½ cup brown sugar

  • ½ cup soy sauce

  • ½ cup onion, diced in large chunks (the sweet style, purple onion)

  • ½ cup green pepper, sliced

  • Salt and pepper
Mix the pineapple juice, soy sauce and brown sugar together.
Add cubed chicken to crock pot.
Add chunked pineapple, green pepper and onion over the chicken.
Pour pineapple juice mixture over the top.
Cover and cook on low heat 6 hours or high heat 4 hours.
Serve over white rice.
Tip:  A good variation of this meal if you prefer dark meat, is to use whole chicken thighs instead of chicken breast.  Also, use coconut water or coconut milk to cook the rice and it adds a nice tropical flavor to the dish!
