Easy, Delicious Guacamole
(From Our May 2018 Newsletter - Grandma C.)
Ingredients
- 5—6 ripened avocados
- ¾ cup pico de gallo, fresh
- 2 TSP diced jalapeno chilies (from a jar, tamed or hot, your choice)
- 2 TBSP fresh cilantro, chopped finely
- 1—2 TBSP fresh lime juice
- Salt and Pepper
Cut avocados in half and remove seeds. Scoop out the avocado with a large spoon. Dice into half inch pieces. Add to medium sized bowl.
Add pico de gallo (I use the store brand fresh made pico, but you can make your own with diced tomatoes, onions & cilantro).
Add diced jalapeno peppers, cilantro & lime juice. Salt and pepper to taste.
Mix with a spoon if you want to retain the chunky style, or with a fork if you prefer the creamy type of guacamole.
Serve right away or refrigerate, but it only keeps for a day or two!
