Crock Pot Cajun Rosemary Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 4 potatoes, cut in 2 inch cubes
- 2 cans cream of chicken soup
- Fresh garlic (2 cloves)
- 1 tbsp Cajun seasoning (can use more or less, depending on your taste for spice)
- 1 tsp ground Rosemary
- 1 pinch Thyme
- 1 pinch Marjoram
- 1 tsp McCormick Grillmates — Brown Sugar Bourbon Seasoning
- 2 tbsp olive oil
- Salt and Pepper
Place all seasonings and 1 tbsp oil in a large plastic Ziploc bag and shake to mix.
Add 1 tbsp oil to the bottom of the crock pot. Using a small amount of the spice mixture from the Ziploc Bag, sprinkle over the oil in the crock pot.
Place Chicken in Ziploc bag and shake to coat.
Layer the chicken in the bottom of the crock pot.
Add 2 cloves of garlic to the crock pot. Spoon 1 can of cream of chicken soup over the chicken. Add potatoes over the layer of chicken soup. Salt and pepper to taste, then add 2nd can of cream of chicken soup over the potatoes.
Cover and cook on high 6 hours.
Extra veggies such as carrots can be added to this dish. It makes a wonderful, hearty meal at the end of a long day!
