(From Our September 2019 Newsletter - Grandma C.)
Ingredients
- 1 lb Sirloin Steak
- 2 tbsp extra virgin olive oil
- 1 tbsp minced garlic
- 1 12 oz pkg Fettuccine
- 4 cups baby spinach
- 1½ cups cherry tomatoes, halved
- 1 tbsp fresh parsley
- 2 tbsp flour
- 2 tbsp butter
- 2 cups whole milk (for a creamier effect)
- ½ cup grated parmesan cheese
- ½ tsp garlic salt
- Salt and Pepper
Cook pasta according to package directions, to al dente stage. Drain and set aside.
Brush both sides of steak with olive oil, season with garlic salt, salt & pepper and place in a large, preheated skillet on medium heat.
Cook approximately 3-4 minutes on each side. The result will be a medium rare steak.
Remove from pan and set aside to rest for a few minutes before slicing.
To make the Alfredo sauce, add butter and minced garlic to the skillet on medium heat and stir until melted.
Whisk in the flour until smooth and add the whole milk. Stir to blend. Add more salt and pepper to taste.
Let simmer on medium low heat for a few minutes, stirring occasionally.
Once it has thickened, add parmesan cheese and stir until melted. Add parsley and tomatoes and cook for 2 minutes to let the tomatoes soften a bit.
Add cooked pasta and toss to coat, then add the spinach and toss until it´s wilted. Top with sliced steak.
