Kielbasa Hash

(From Our September 2010 Newsletter - Grandma C.)

Ingredients
  • 1 pound Kielbasa Sausage

  • 3 Yukon Gold Potatoes (diced)

  • 1 Red Bell Pepper (sliced)

  • 1 Green Bell Pepper (sliced)


  • 1 Medium Onion (diced into large cubes)
Heat 1 TBSP cooking oil in a skillet.
Add potatoes and cook till almost tender, about 15 minutes.
Add onion & bell pepper and cook an additional 6-8 minutes.
Slice kielbasa into 1/2 inch slices and add to skillet, cooking only until heated through.
The oils from the Kielbasa will flavor the hash.
Add salt and pepper to taste.
*For a lighter hash, cook the Kielbasa in a skillet by itself and drain the grease before you add it to the hash.
