Hearty Potato And Sausage Soup

(From Our October 2020 Newsletter -Grandma C.)

Ingredients
  1. 1 yellow onion, diced

  2. ½ lb beef smoked sausage or kielbasa

  3. 1 TBSP butter or margarine

  4. 2 celery stalks, thinly sliced

  5. 2 carrots, grated

  6. 2 baking potatoes, peeled and cubed

  7. 3 cups cabbage, chopped

  8. 4 cups beef broth

  9. 1 can petite diced tomatoes (do not drain)

  10. 2 cups water

  11. 1 tsp Italian seasoning

  12. 1 tsp dried parsley

  13. 1 bay leaf

  14. 1 tsp garlic powder

  15. 1-2 TBSP cornstarch

  16. Salt and Pepper
Saute` onion, butter, celery and sausage in the bottom of the soup pot.  If using kielbasa*, skip the butter as kielbasa has its own oil.  Saute` for approximately 5 minutes.

Add broth and water and bring to a boil.  Add potatoes, cabbage, carrots and seasonings.  Reduce to medium–low heat and simmer 15-20 minutes.

Add diced tomatoes.  Mix cornstarch with a few tablespoons of water and stir into the soup.

Salt and pepper to taste.  Let simmer another 5 minutes to thicken and remove from heat.

Serve with a sliced baguette or some garlic toast!
