Bacon Ranch Egg Salad – Keto Friendly

Ingredients
  1. 6 hard boiled eggs

  2. 3 TBSP scallions, chopped

  3. 4 6 pieces cooked bacon (crispy)

  4. ½ cup cheddar/jack shredded cheese

  5. ⅓ cup mayonnaise

  6. 1 TBSP dry Hidden Valley Ranch dressing mix

  7. Salt and Pepper to taste
Chop the hard boiled eggs and place in a medium bowl.

Crumble the bacon and place in the bowl, reserving a teaspoon or so for topping.

Add cheese, salt and pepper.

Add 2 tbsp scallions, mayonnaise and dry ranch dressing mix.

Stir with a wooden spoon until blended.

Top with reserved bacon bits and scallions.
