Cheesy Green Chile Cauliflower Casserole(Keto Friendly)

Ingredients
  1. 2 tbsp butter

  2. ¾ cup onion, chopped

  3. ¾ cup celery, sliced

  4. 2 cups frozen cauliflower rice

  5. 1 cup shredded cheddar cheese

  6. 1 cup Monterey Jack cheese

  7. 1 – 4 oz can green chilies, drained

  8. ½ cup sour cream

  9. ½ cup heavy cream

  10. ½ tsp minced garlic

  11. Salt and Pepper to taste
Preheat oven to 325 degrees.  Grease an 8x8 glass baking dish.

Cook cauliflower rice according to package directions.  If watery, strain it and set aside.

Melt butter in a skillet on medium heat and saute onion and celery until slightly softened.

In a large mixing bowl, add cauliflower, cheeses, sour cream and cream, the sauted celery and onions (with butter), the green chilies and seasonings.

Mix with a spatula until combined and spread in baking dish.

Bake at 325 degrees for 20-25 minutes.
