Cheesy Potato And Kielbasa Soup

Ingredients
- 1 lb kielbasa sausage, cut into ½ inch slices
- 3 large baking potatoes, cut into cubes
- ½ cup shredded carrots
- ½ cup diced onion
- ½ cup thinly sliced celery
- ¼ cup chopped parsley
- 1 TBSP olive oil
- 1 tsp minced garlic
- 4 cups chicken broth or chicken stock
- 1½ cups milk
- ½ cup sour cream
- 2 cups finely shredded cheddar cheese
- Bacon Bits
- Salt and Pepper
In a dutch oven or soup pot, heat olive oil and add sliced kielbasa.
Cook for 5 minutes, stirring frequently. Remove from heat.
Add garlic, celery and onion and saute for approximately 2 minutes.
Add chicken broth, potatoes and carrots and bring to a boil. Reduce heat and simmer for 15 minutes.
Add in the cooked kielbasa, milk, sour cream and cheddar cheese. Salt and pepper to taste.
Cook over low heat until cheese has fully melted, approximately 7–10 minutes. Garnish with parsley and bacon bits.
