Pistachio Salad
(From Our April / May 2011 Newsletter - Grandma C.)
Ingredients
- 1 3oz. pkg Pistachio Pudding mix
- 1 small container Cool Whip
- 1 small can crushed pineapple or pineapple chunks (your choice!)
- 1/2 bag of mini marshmallows
Place Cool Whip in a medium mixing bowl.
Add pineapple (with the juice) and stir.
Add Pistachio Pudding mix and fold into mixture until mixed.
Then add marshmallows and fold.
Chill for about an hour and serve!
*This is a basic recipe…there are variations! You can use banana pudding mix and add coconut along with the pineapple and marshmallows, or you can use vanilla pudding with mandarin oranges instead of pineapple, (use the juice from the can as well) or add fresh fruit such as strawberries or raspberries. Don't be afraid to get creative!
