Southern Baked White Fish With Artichoke Relish

Ingredients
- 1 pound of White Fish
- 1/2 tsp. of old bay
- 1/2 tsp. Creole seasoning
- 1/2 tsp. parsley
- 1/4 cup olive oil
Spread 1/2 of the olive oil in pan. Season fish on both sides with old bay and Creole seasoning. Spread the remainder of the oil on top the fish. Bake in oven for 20 minutes at 350 degrees. Sprinkle parsley over the fish after baking. Serve with Artichoke Relish.
Artichoke Relish
Jerusalem Artichokes are the the root of the Sunflower: this root with other spices become a very tasty hor d'vour or side dish!
Here are some ways to use it!
- Serve relish over cream cheese or brie with crackers for a delightful appetizer for your guests.
- Spice up your white fish by adding a dollop of the relish as a topping.
- Give your regular tuna or chicken salad a kick by replacing your current relish with Artichoke Relish
