Roasted Chicken Breast With Veggies In Foil(From Our September 2011 Newsletter - Grandma C.)Ingredients
Spray each square sheet with cooking spray. Place one chicken breast in the center of each sheet and season to your taste. Pour 1/4 cup of spaghetti sauce over each piece of chicken. Add a serving of raw mixed veggies, (approx. 1 to 1 1/2 cups). Salt and pepper to taste. Fold tin foil from the top until just an inch or so from the chicken breast and veggies. Fold in sides. Bake on a cookie sheet at 350 degrees for approx 30-35 minutes. Be careful when opening the foil! The steam is very hot! Transfer to a plate and sprinkle with parmesan cheese. Serve with garlic toast. *Another variation of this recipe is to use Garlicky Alfredo Sauce instead of Spaghetti Sauce! Yum! |
