Bisquick Pineapple Upside Down Cake

Ingredients
- 1 can sliced Pineapple (reserve juice)
- 2 cups Bisquick mix
- 1 egg
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup pineapple Juice
Mix the bisquick, eggs, sugar, milk and pineapple juice together with spoon until semi-smooth.
Batter may be a little bit lumpy, this is fine.
Grease the bottom and sides of a 9" X 9" baking pan, preferably glass.
Line the bottom with round pineapple slices. Place a sliced Maraschino Cherry in the middle of each slice. Pour batter over pineapple slices.
Bake at 350 degrees for 30-35 minutes. (Use the toothpick method to test the batter.) If it comes out clean, cake is done!
Wait 5 minutes for cake to cool just slightly, then turn onto a serving plate.
Serve cool with whipped cream or warm with vanilla ice cream.
