Old Fashioned Summer Rice Salad(From Our June 2012 Newsletter - Grandma C.)Ingredients
Slice radishes and celery, dice cucumber and tomato. Mix vegetable oil and lemon in a shaker until well blended. Add vegetables to rice and toss, add salt and pepper to taste and mix in the oil/lemon mixture with a wooden spoon. Let sit at least 2 hours and stir one more time before serving. Better overnight! Variations: Add Chicken, Summer Squash or Raisins for a different flavor. **Tomato should be slightly under ripe… or firm. It works best this way. |
