Cheesy Garlic/Dill Mashed Cauliflower

Ingredients
- 2 heads cauliflower (cut into florets)
- 2-3 Fresh garlic cloves (to taste)
- ½ cup sour cream
- 2 tsp fresh dill weed (optional)
- 2-3 TBSP milk
- ¼ cup fresh grated parmesan cheese
In large sauce pan place the cauliflower and garlic cloves together in approximately 1½ inches of water.
Bring to a boil and then reduce heat and simmer until lightly tender. You will want the vegetables to be slightly crunchy for consistency.
Drain remaining water and place the cauliflower, garlic and the rest of the ingredients in a food processer.
(A blender will work but the process takes a bit longer.)
Blend until the cauliflower takes on the quality of mashed potatoes. It will be slightly more grainy than potatoes.
Spray a baking dish with cooking spray. Transfer the mixture to the baking dish and bake at 350 degrees for about 25 minutes. Serves 4-6 people.
This is a great recipe for low carb lovers! You would never know that it isn't potatoes!
