Simple, Fresh Summer Salad

Ingredients
- 2 cups Diced Bell Pepper, (the small red, yellow and orange variety)
- 2 cucumbers, diced
- 1 package grape tomatoes, halved
- ½ cup Lighthouse brand balsamic vinaigrette dressing
Place diced vegetables in a medium mixing bowl. Add dressing and toss, then move to a covered container. Shake lightly and refrigerate for a couple of hours before serving.
That's it!
This salad is easily modified if you like other types of veggies such as zucchini, celery and onion. You can also add cubed cheese for added flavor, or you can serve it with sliced avocado on top. It's a very refreshing salad for summer.
