Collard Greens(From Our March 2010 Newsletter - Auntie Que)Ingredients
Wash Collards if by the bunch remove leaves from stems and cut into small pieces if by the bag you may want to cut a little smaller (they often come in larger pieces). In a separate pot add 16 oz of chicken broth ½ cup of water for the smoked meat pot, small cut up onion salt and pepper add Collard Greens and bring to a boil and then let simmer for 45 min or until tender add meat and stir. Makes about 4 cups. One-cup of Collards is only 49 Calories. Serve with Southern fried Chicken and rice. |
