Collard Greens

(From Our March 2010 Newsletter - Auntie Que)

Ingredients
  • 1-2 pack of Smoked Ham Hocks or Smoked Turkey Wings

  • 2 lbs.  of Collard Greens in the bag or by the bunch

  • 1 sm.  Onion

  • 16 oz of Chicken Broth

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon Pepper

Boil Ham Hocks or Turkey Wings for 2 hours or until tender remove bones and skin and set aside.
Wash Collards if by the bunch remove leaves from stems and cut into small pieces if by the bag you may want to cut a little smaller (they often come in larger pieces).
In a separate pot add 16 oz of chicken broth ½ cup of water for the smoked meat pot, small cut up onion salt and pepper add Collard Greens and bring to a boil and then let simmer for 45 min or until tender add meat and stir.
Makes about 4 cups.
One-cup of Collards is only 49 Calories.
Serve with Southern fried Chicken and rice.
