Cheesy Gratin Potatoes

Ingredients
- 4-5 cups fresh potatoes, peeled and sliced thin
- 1 cup of finely shredded four-cheese blend
- 3½ TBSP butter
- 3½ TBSP flour
- ½ cup sliced scallions
- 1 tsp dried parsley flakes
- 2 cups milk, either whole milk or 2%
- salt and pepper
Preheat oven to 350 degrees. In a dutch oven, melt butter. Stir in the flour and add milk slowly, stirring to blend.
Add dried parsley and bring to a boil over medium heat, stirring constantly. Mixture will thicken after about 2-3 minutes.
Remove from heat and add the cheese blend. Stir to mix. Add salt and pepper.
Once cheese is melted, fold in potatoes and scallions. Transfer the mixture to a greased baking dish.
Bake covered for one hour. Uncover and bake an additional 30 minutes or until potatoes are tender. Let stand 5 minutes before serving.
*Oven temperatures vary! Be sure to test potatoes with a fork to make sure they are tender before you remove them from the oven. Recipe will serve 6.
