Crunchy Blueberry Cream Cheese Parfait

Ingredients
- 1½ cups fresh blueberries
- 8 oz cream cheese, softened
- ½ cup sour cream
- 2 TBSP granulated sugar
- ¼ tsp vanilla extract
- ¼ cup powdered sugar
- 3 graham crackers, crushed, or ¼ cup of your favorite granola
With a hand mixer, blend cream cheese, sour cream, powdered sugar and vanilla extract until creamy.
Layer in parfait goblets beginning with blueberries, then a layer of cream cheese mixture, then a small amount of graham crackers or granola, then repeat.
Garnish with mint leaves if desired. Chill for 1 hour befor serving.
Variations:
- Can be made with blueberries and lemon cream cheese by substituting lemon extract for vanilla.
- Can also be made with raspberries and orange cream cheese by using orange extract instead of vanilla.
Makes 4 parfait desserts
