Savory Sweedish Meatballs & Pasta

Ingredients
- 1 lb ground beef
- ½ cup breadcrumbs
- 1 egg
- ½ onion, finely minced
- 2 TBSP vegetable oil
- 1 cup half and half cream
- 1 cup milk
- 1 can beef broth
- 1 TBSP Worcestershire sauce
- 1 cup shredded parmesan cheese
- ¼ cup prepared horseradish
- 3 cups egg noodles
- Salt and pepper to taste
In a large bowl, combine ground beef, breadcrumbs, onion, egg, salt and pepper to taste. Mix with hands until well blended.
Heat the vegetable oil in a deep skillet, medium heat.
Form meat mixture into meatballs,
(about ping pong ball size is perfect). Add to skillet.
Cook for 2-3 minutes, turning meatballs halfway through.
Add beef broth, cream and milk, stir. Add the worcestershire sauce and horseradish, stir lightly to blend flavors.
Cook until the mixture begins to boil, then add egg noodles. Stir constantly until the pasta is done
(package directions generally suggest 7-8 minutes).
Stir in the Parmesan cheese at the very last, right before serving.
**Tip: I always mix meatballs by hand, but I wear food prep gloves to keep the meat mixture off of my hands. It's a great idea when handling any type of meat, especially poultry!
