Hominy Casserole

Ingredients
- 2 large cans (23oz) Hominy, drained
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 tsp minced garlic
- 1 cup diced frozen carrots
- ½ cup sour cream
- ¼ cup milk
- 1 cup shredded cheddar/jack cheese blend
- 6 slices bacon, cooked and diced
- 1 can cream of chicken soup
- 1 bag of garlic croutons
- Salt and Pepper
Spray the bottom of a glass casserole dish with cooking spray.
In a small mixing bowl, combine chicken soup, sour cream, *milk and shredded cheese. Stir until well mixed.
Add all other ingredients to the glass casserole dish. Sprinkle with Salt and Pepper to taste.
Pour chicken soup mixture over the top. Lightly mix with a wooden spoon so that the all of the hominy and vegetables are covered.
Bake at 350 degrees for 25-30 minutes.
Remove from oven, add croutons to top of casserole and bake for an additional 15 minutes.
Serve as a side dish or a main course with a salad!
* Extra milk can be added if you prefer a creamier casserole. Just increase the milk to ½ cup.
