Peanut Allergy

A couple of semesters ago, a classmate sitting next to me asked me if I was allergic to peanuts.  I said no and asked, “why?”  She told me that in another class of hers she pulled out a peanut butter and jelly sandwich and the girl next to her had a peanut allergy and had to leave the classroom.  She said that from that point on, she always asks to make sure that no one next to her is allergic.

I know having a peanut allergy is very serious and can be fatal but I never really gave that incident another thought until I recently read an article about a young girl in her twenties who passed away four years ago from kissing her boyfriend, who had just eaten a peanut butter sandwich.  Now the mother of the girl is speaking out in hopes of keeping this from happening to another child.

Did you know that peanuts are one of the most common food allergies and approximately 3 Million Americans are allergic to them?

Exposure to peanuts can occur in different ways, such as: direct contact (consumption of peanuts and sometimes direct skin contact), cross contact (foods being exposed to peanuts during food preparation) or inhalation (Inhaling dust or aerosols containing peanuts).  Once someone who is allergic has been in contact with peanuts they will develop an allergic reaction because their body mistakenly identifies peanuts (or foods/oils containing peanuts) as a harmful which substance causes your immune system to release symptom-causing chemicals into your bloodstream.

When your immune system is under attack you will have an allergic reaction within minutes and can experience mild symptoms such as:
  • Skin reactions – hives, redness and swelling
  • Itching/tingling around the mouth and throat
  • Shortness of breath
  • Tightening of the throat
  • Vomiting, diarrhea and cramps
If you are severely allergic to peanuts you can go into anaphylaxis (a life –threatening allergic reaction) and experience these types of symptoms that may require treatment with an EpiPen and/or a trip to the emergency room:
  • Constricted airways
  • Swelling of the throat, making it hard to breath
  • Rapid pulse
  • Dizziness, lightheaded and loss of consciousness
If you are allergic to peanuts you should follow these five tips:
  1. Always ask if the food contains any form of peanuts.  Do this at a restaurant and at the homes of friends and family.
  2. Never share food with others.
  3. Check labels each time you buy products (food and non-food products like: lotion, shampoo, etc.).
  4. Carry an EpiPen with instructions in case someone has to administer for you.
  5. Think about wearing a medical alert bracelet or necklace – this will help make sure you get the right treatment if you are unable to speak during a reaction.
Never take a peanut allergy lightly.  If you are hosting a party of any kind always label foods that contain or may contain peanuts.  Doing something this simple can save someone‘s life.

Grandma's Kitchen With Grandma C.:

Savory Sweedish Meatballs & Pasta

Grandma C.
Ingredients
  1. 1 lb ground beef
  2. ½ cup breadcrumbs
  3. 1 egg
  4. ½ onion, finely minced
  5. 2 TBSP vegetable oil
  6. 1 cup half and half cream
  7. 1 cup milk
  8. 1 can beef broth
  9. 1 TBSP Worcestershire sauce
  10. 1 cup shredded parmesan cheese
  11. ¼ cup prepared horseradish
  12. 3 cups egg noodles
  13. Salt and pepper to taste
In a large bowl, combine ground beef, breadcrumbs, onion, egg, salt and pepper to taste.  Mix with hands until well blended.

Heat the vegetable oil in a deep skillet, medium heat.  Form meat mixture into meatballs, (about ping pong ball size is perfect).  Add to skillet.

Cook for 2-3 minutes, turning meatballs halfway through.  Add beef broth, cream and milk, stir.  Add the worcestershire sauce and horseradish, stir lightly to blend flavors.

Cook until the mixture begins to boil, then add egg noodles.  Stir constantly until the pasta is done (package directions generally suggest 7-8 minutes).  Stir in the Parmesan cheese at the very last, right before serving.

**Tip: I always mix meatballs by hand, but I wear food prep gloves to keep the meat mixture off of my hands.  It's a great idea when handling any type of meat, especially poultry!

Keeping Fit With Clayton "TR" Parker

Counter Current Swimming

Earlier this month I went swimming in the Colorado River.  As shallow as the river seems, there are definitely some deeper spots with strong currents.  With swimming being one of my favorite things to do, I decided to find one of those spots and swim against the current.

I must tell you, that is one of the best workouts that I have had in awhile.  I was swimming freestyle has hard as I could and was going nowhere!  After a few minutes I started to feel it in my upper body and mid-section.  So, I decided to make a workout of it.  I did 3 sets of freestyle swimming, 3 sets of backstroke and 3 sets of breaststroke.  I repeated each set about 5 times.  It was a great upper body and cardio workout.

Knowing that I was on to something, I decided to research counter current swimming.  As disappointed that I was that I did not revolutionize water workouts, I was equally surprised at how common counter current swimming is!

There are actually pools that are designed for such activity all of which I am sure are much safer than the Colorado River.  These pools actually allow you to adjust the strength of the current to maximize your workout.

This opens up a whole slew of water workouts.  You can do a freestyle swim, backstroke or breaststroke like I did, or you can go back to my August 2015 article and revisit our friend the Water Noodle!  Some of the workouts in that article can be done in a counter current pool as well.  They are:
  1. Chair Kicks:  Put the noodle around your back and under your arms like you are sitting in a chair and then kick.

  2. Front Kicks:  Put the noodle around your chest and under your arms, then kick.

  3. Front Paddle:  Float on your stomach with your ankles over the noodle. Without kicking, just paddle with your arms.
There are more but this will at least get you started.  You can refer to that August article to see if any more of them will work for you!  Whatever exercise you choose to do, do it safely and I hope you have as much fun and as good a workout as I had.

Remember, never swim alone!  Always take a partner with you.

True, we did offer a vision plan and true, we don't offer it anymore.  The reason that we dropped it is that we discovered that the vision plan that we offered was actually not a good enough value to our members.

It turned out that the vision plan had the same fault as many prescription insurance plans have.  In some cases the cost of a prescription is cheaper than the deductible that you would have to pay using your insurance.  Basically it was cheaper to pay full retail price than to use your insurance.

We discovered that by going to Nationwide Vision®, LensCrafters®, America‘s Best®, VisionWorks®, Target® or Walmart®, we realized a greater savings than our vision plan offered.

The vision plan we offered was intended as an added value for our members.  When we realized that it wasn't, we dropped and went back to what we do best…  providing our members with the best dental plan in America.


The Rise and Fall of Dental Prices, Among Other Things

The dental industry suffered in the slow economy just as any other industry, but the question I'd like to ask is why?

In the past it was one of the most lucrative fields in the market, and it seemed that dental prices were rising faster than the rate of inflation.  Seriously, you could buy a car (or two) for what it costs to restore your teeth nowadays…  with the new technology for cosmetic procedures such as implants, veneers, even crowns are exorbitantly priced!

However, in the last few years, with the recession/depression/economic downturn (call it what you will) it seems that all of a sudden, the price of dentistry has become more negotiable!

Dentist's are lowering their fees; some are even offering a 50% cut in everyday routine procedures. Or maybe it's that they are getting more creative with payment options; their own "in house" financing, credit card companies that are getting in on the action by offering medical and dental financing to qualifed people.

I don't know, it just seems to me that in this time when everyone is recovering financially and struggling to stay afloat, if they can offer these discounts and options now, why couldn't they have offered more creative financing options and lower prices all along?

Could you chalk it up to GREED?

Seriously, one could apply this theory to every product or service based industry out there and the question is the same.

Could this GREED factor have put us where we are today?
