Home Made Tomato Soup
(From Our January 2014 Newsletter)
Ingredients
- 4-5 cups of fresh tomatoes, coarsely chopped
- 1 thin slice of yellow onion
- 1 tbsp chopped fresh basil
- 1 tsp chopped fresh parsley
- 2 cups vegetable broth
- 1/2 tsp celery salt
- 1/4 tsp pepper
- 1 tsp butter or margarine (optional)
- 1-2 tsps sugar
Place all ingredients in a blender and puree until smooth.
Cook over med/low heat until heated and serve with cheesy croutons or toasted cheesy garlic bread as a garnish.
