Fresh Summer Balsamic Salad
(From Our September 2016 Newsletter - Grandma C.)
Ingredients
- 3 Bell Peppers, (1 red, 1 yellow, 1 green) diced
- 1 bunch green onions (scallions), sliced
- 1 container grape tomatoes, halved
- 2 stalks celery, sliced
- 1 cucumber, diced
- 1 green apple, diced
- 4-5 slices bacon, cooked crisp and crumbled
- ½ cup feta cheese, crumbled
- 1½ cups cooked rotini pasta, drained and cooled
- ¼ cup Balsamic Vinaigrette Dressing
- Salt and Pepper to taste
Toss all ingredients in a medium mixing bowl. Mix well. Transfer to a serving bowl with a lid, chill for 1-2 hours before serving.
Note: You can substitute cheddar cheese cubes for the feta cheese.
